
In addition to the health benefits, replacing some of the meat in your diet with fruit and vegetables has huge environmental benefits. As reported in the New York Times, Pamela Martin of the University of Chicago estimates that a six ounce steak requires 16 more times fossil fuel to raise than a vegetable dish made of one cup of broccoli, one cup of eggplant, four ounces of cauliflower and one cup of rice. (Sounds like a horrible recipe, but you get the point.)
And this is the perfect time to add more fruits and vegetables to your diet. The Pawtuxet Village Farmers’ Market is stocked with a summer’s harvest of tomatoes, sweet corn and peaches. Also available are the less common harvests like kohlrabi, kale, swiss chard and beets. The farmers love to volunteer their favorite ways to eat their unusual veggies – ask Michelle of Zephyr Farm about Kohlrabi.

Wanted: Corn Huskers
The Farmers’ Market is spreading the word about the annual corn-husking to provide fresh locally grown corn for the Cranston school lunch program. Every year volunteers husk about 2000 ears of corn, donated by Vinny Confreda, at Confreda Farms on Scituate Avenue in western Cranston. Husking starts at noon and takes a pleasant two hours. Volunteers are needed for Monday, September 15 and Monday, September 22. To sign up for September 15, email Lisa Gargaro (cheflisa@cox.net), the PTO president at Orchard Farms. To sign up for September 22, email Julie Bradley (steveandjul@cox.net), the PTO president at Rhodes Elementary School.
Rain Barrel Pick Up Line
New England Rain Barrel returns to the market Saturday to distributed pre-ordered barrels. The Friends say that they usually bring a few extras, so you may be able to buy one that morning.
