The Peak of the Season Continues
Here’s an update from the Friends of the Pawtuxet. The crops are flowing in. Peaches, fingerling potatoes, heirloom tomatoes, blueberries, sweet corn and much more will be available at the Pawtuxet Village Farmers Market on Saturday.


Three Bean Salad
It’s time to experiment with new salad recipes. We enjoy corn and tomato salad with a vinaigrette, cucumber with yogurt and garlic and the three bean salad below. My three bean salad, (that does not contain three beans), varies according to what is available at the market. This week I made it as follows:

The vinaigrette:

6 tablespoons of olive oil
3 tablespoons of wine vinegar
¼ teaspoon of dry mustard
1 teaspoon of sugar
¼ teaspoon salt (maybe more depending on your taste)
¼ teaspoon ground pepper
1 clove of crushed garlic
touch of hot sauce (optional)

Vegetables

2 ears of corn (cook and remove kernels from cob)
a pound of green and yellow beans mixed (cook)
2-3 sliced carrots
1 onion minced
1 green pepper chopped
10-15 cherry tomatoes cut in half
chopped parsley (optional)
In addition to its good taste, this salad looks great.
